I’m almost embarrassed to admit how much Emi and I enjoy this concoction of healthy, delicious foods. It’s more of a shareable dip than a salad, but if you add plenty of lettuce, it can definitely qualify as a salad! We prefer it on the heartier side, which is how this recipe is designed. In a pinch, I’ve even made it on my lap while on the road, but of course, it’s much easier if you have access to a cutting board and other kitchen tools. In our glove compartment, I always keep 2 of these “sporks” and throw in a knife to our big container for prepping, its worked so far but I’m always open for suggestions!
We love to keep these ingredients stocked in our pantry, and sometimes I’ll even prepare this salad the night before if I know our daily adventures will start early. If you’re eating in the car, I recommend serving it in a wrap or a soft taco shell. with a napkin around the bottom to Cath the stuff flying out.
